Baking traditional sourdough bread in Flinders' original woodfired oven.

What's it all about?

We ferment our dough for over eight hours giving you a full flavoured nutritious loaf that is also extremely low in gluten using 100% organic Australian flour.

No commercial yeast on premises just natural ingredients sourced as locally as possible. Our base dough for every loaf consists simply organic flour, victorian pink lake salt and water.

Everything is baked in the original Flinders’ Wood f
ired Scotch Oven. Traditional hand shaping and cutting techniques are used, reducing the need to power excess machinery. Any energy used on site is replaced to the grid via renewable hydro-electricity in Tasmania.

When visiting the historic bakery you can see first hand the original wood fired oven and 1940s mixer, chat to the friendly bakers and take home a delicious fresh loaf of bread.
